We used 18 tons of hops last year. 15 of these were American varieties from Yakima Chief Hops, an organization owned by the family farms that grow them. To make the best beer possible we need the best hops possible, so we travel to Yakima Valley in Washington every year during the harvest to select the hops we will use for the following season. We evaluate dozens of samples from dozens of local farms to find the right hops for us. Not only does this guarantee that we will receive the highest quality hops and achieve the desired flavor profile of each beer, but it helps us maintain a relationship with the farmers who grow those hops and have a connection to the agricultural process. For Harvest year 2024 we selected from C&C Hop Farms, Wyckoff Farms, Tributary Farms, Sauve and Sons Farms and Coleman Agricultural Farms. Harvest IPA showcases the hops we’ve chosen from the 2024 harvest, finally processed and delivered to us here, in their debut. A powerhouse of Mosaic, Citra, Simcoe and Ekuanot, it doesn’t get fresher than this!
Golden bright and hazy, juicy sweet with a gentle bitter finish, bright tropical aromas of mango and pineapple, fresh citrus zest, and some hints of stone fruit.
A base of Heidelberg pilsner malt lays a clean and simple malt foundation which will allow the hops to shine, a bunch of wheat, oats and spelt add a touch of rustic character, a creamy body and that signature haze.
