Nonsidro '20 is a beer, made from organic Italian barley malt, organic evolutionary population wheat and organic surannee hops, spontaneously fermenting thanks to the microflora left in the barrel from our 2019 Cider. It spent 7 months of fermentation and maturation in French oak barrels ex wine - from Bolgheri (Ornellaia) and Chianti Classico (Lamole) - followed by 8 months of re-fermentation and bottle ageing. The 2019 Cider was obtained through the spontaneous fermentation of apples from 10 ancient Tuscan varieties.
In the mouth it is an explosion, because it is alive and bursting with vitality, with a range of complex acidity, from lactic to delicate acetic, to accompany the flavours of citrus and ripe apples. The low alcohol content, compared to our average of only 6.3% vol., together with a certain sweetness, make it an agile and very enjoyable drink.
Nonsidro '20 is part of our Mommy's Boy Series line, which includes beers that are born from the microflora propagated by a previous spontaneous fermentation.
