Nonsangio 2020 is the result of a collaboration with Tenuta La Novella, a biodynamic winery in Chianti Classico. The challenge we set ourselves, together with Simone and Lorenzo, was to express Sangiovese, the sovereign vine of this territory, in all the freshness that a high altitude vineyard can offer. So we decided to take a risk, betting on spontaneous co-fermentation, without the use of yeast, brett or added bacteria, but exploiting the rich microflora resident on the biodynamic grapes, helped by a few boxes of wild grapes we found around the estate, to ferment a wort brewed the same day as the harvest. The harvest, however, was early, being brought forward by about 10 days. Brief passage on the skins, for a coppery colour, between rosé and orange.
Fortunately, the gamble paid off. The beer is decidedly fresh and delicate, with fruit in the foreground (raspberries, watermelon, melon, apple) and a very balanced acidity, accompanied by elegant wild notes. Simone and Lorenzo were satisfied, having rediscovered the character of their Sangiovese Rosè wine. We, on the other hand, rediscovered the balance and ease of drinking, which is what we value most in our beers. In addition, spontaneous co-fermentation has given us a drink that not only encompasses the distinctive traits of both beer and wine, but is perhaps also something different, a "third" thing. And so we are delighted that this is the first beer in the series we have dubbed Quelle Che Non.
