100% spontaneous fermentation (no brett/bacteria/yeast added). Coolship + barrique fermentation and maturation. After 18 months, a bunch of biodinamic Canaiolo Nero grapes was added. This started a new fermentation thanks to the microflora living on the skin. Red berries, citrus, elegant wild notes. It deserves a few minutes in the glass, for all the complexity to come out.
